Hot & crispy fish - Recipe


As Apetizer
Serves 8 people
This is a far eastern dish which is a superb appetizer
for those who enjoy far eastern dishes.

Ingredients


For fish batter:
  • 20 pieces of 1" bone less fish strips.
  • 2 tsp salt
  • 1/2 tsp black pepper powder
  • 1/2 ginger /garlic paste
  • 2 egg
  • 1/2 c flour
  • 1/2 c corn flour
  • oil for deep frying
For coating sauce:
  • 2 heaped tbsp shredded ginger
  • 1/2 c water
  • 1/4 c brown sugar ( can add more if u like it sweeter).
  • 2  tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1/4 c vinegar
  • 2 tbsp roughly crushed peanuts
  • 1 tbsp sesame seeds
  • 1 tsp red chilli flakes.

Directions

  1. Marinade the fish in it's batter & leave in the fridge for 2 hours.
  2. Heat oil & double fry the marinated fish until crisp & golden (u need to fry the fish pieces twice = fry then strain, then do the same again).
  3. Strain out the oil on a wired rack.
  4. Boil the ginger in water then add sugar, soy sauce, oyster sauce & vinegar.
  5. keep boiling until the sauce thickens (like thick syrup).
  6. Add the fried fish then sprinkle the peanuts, sesame & chilli flakes.
  7. Toss all well to coat.
  8. Bring out on a serving platter & serve hot as an appetizer.
